I'm going to start playing classical acoustins and more flamenco stuff, so I was wondering.
What modes, sweeps, etc. should I use?

Uh.
I wouldn't suggest getting into classical or flamenco without a qualified teacher, there's too much nitpicking shit when it comes to technique.
Modes...classical music is key based....you'll basically only see things in the Major and Minor key.
Flamenco I know often times is in Phyrgian dominant, but I don't know too much about it, get a teacher, and analyze the music. Since classical and flamenco are both fingerstyle, there is no sweep picking, you may play arpeggios, but you ain't gonna be sweepin'.

Exactly.
And familiarity with the music is imperative.
"Sweepin" hehe they've got a different kind of "sweepin" in the right hand technique. Takes years just to get it right, before you can even *think* of perfecting it.

Classical is an entirely different animal.
I would suggest getting a book and just starting at the beginning. It shouldn't be long before you are playing two-part harmonies with moving bass lines. The best books IMO are the Sagreras, Shearer, and Noad series.

I got the first one by NOAD, still haven't touched it. I just CAN'T play fingerstyle the way they require it. Fucking rest strokes, and keep your fingers on the strings and not touching the body with your fretting hand.

Yeah the rest strokes can be a biotch. I don't have too much trouble with them for fingerpicking on the higher stirings while using the thumb on the bass strings (in other words, when fingers are assigned one-per-string for the most part), but for scale runs and other things that jump from string to string, i'm tripping all over the place; can't even keep the i-m-i-m bit straight for that.

I can keep the I-M-I-M think straight for ascending, but it's SO FREAKING hard to descend "correctly".

Gotta have the right kind of fingernails too. Mine developed a hooked shape at a certain length which prevented me from having a smooth stroke. My teacher used to coat the top of his nails with epoxy to make them thicker and stronger...they would break too easy otherwise.
Flamenco players use the tops of their nails in a downwards raking motion (starting with the ring finger) for their characteristic strumming sound.
You can even see Jimmy page using this tech during Babe Im Gonna Leave You on the DVD He hasn't got time to take the pick out of his mouth, so he just whacks away at it with the backs of his nails.
